Essence monsters are powerful monsters trapped in crystallised corruption.
Breaking these monsters free allows them to be defeated, dropping the Essence that can then be used to modify equipment.

Essence encounters are a randomly occurring encounter found in both campaign and endgame. The player may encounter monsters frozen in solidified crystal corruption. This always consists of a single rare monster and its minions. They may be broken free by interacting with the crystal around the rare monster 3 times.
The rare monster will have one or more Essences, each of which grant it additional abilities. After being defeated, it will drop the essences.
Like other rare monsters, the encounter does not respawn if the area is reset by player death.
